Crispy Waffles

Ingredients:

  • 2 cups flour (half all-purpose, half whole wheat is fine)
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 3 tsp ener-g w/ 4 tbsp water
  • 1 tsp vanilla
  • 1 3/4 cup soymilk
  • 1/4 cup Earth Balance, melted
  • 1/4 cup oil
  • 1/2 tbsp baking powder
  • dash cinnamon

Instructions:

  1. Make ener-g egg.
  2. Mix dry ingredients.
  3. Mix wet ingredients.
  4. Heat waffle iron.
  5. Combine wet and dry ingredients.
  6. Bake according to waffle iron’s instructions.

Notes:

  • These waffles are crispy and very filling.
  • For some reason, they take about twice as long to cook as most other waffles I’ve made. Cook until steam no longer billows out of the iron.
  • I make 1.5 times this recipe for Evin and myself, which makes 3.5 two-part waffles in our iron. For this amount, I use 1/4 cup Earth Balance, 3/8 cup oil and 2 1/2 cups of soymilk (or soymilk + water)

Banana Waffles

These waffles are acceptably crunchy, very easy and really tasty.

Ingredients:

  • 2 cups flour – I used all-purpose and spelt
  • 2 tbsp Better Than Milk Powder
  • 3 tbsp sugar
  • 4 tsp baking powder
  • dash cinnamon
  • 1/2 teaspoon salt
  • 1 3/4 cup water
  • 1/2 cup vegetable oil
  • about 1 tsp vanilla
  • 1 banana

Instructions:

  1. Mix together dry ingredients.
  2. Mash banana.
  3. Add banana to oil, water and vanilla.
  4. When waffle iron is heated, mix dry and wet ingredients together.
  5. Bake according to waffle maker’s instructions.

Notes:

  • slightly modified from this recipe.
  • I like to let waffles cool for a minute or so on a wire rack (nice time to slather on the Earth Balance) – this allows them to get a little crunchier before adding syrup.
  • Next time, I may make 1 1/2 times this recipe … and maybe substitute apple sauce for the needed half banana.
